    No Bake Cherry Cream Cheese Pie

    This easy no bake cherry cream cheese pie comes together quickly with only 6 ingredients and 2 simple steps! It's incredibly refreshing, sweet, rich, and the best summertime dessert!

    It's basically like a no bake cheese cake but with fewer ingredient thats easier to make, yet just as delish! It's such a refreshing dessert on a hot summer day and it's perfect when you don't want to turn on your oven!

    Everyones always excited to see me show up with this tasty pie and always asking for the recipe!

    Ingredients

    • Graham cracker pie crust (I love an easy store-bought crust, but it also tastes delicious with my homemade graham cracker crust)
    • Cream cheese
    • Condensed milk
    • Lemon juice
    • Vanilla extract
    • Canned cherry pie filling (any canned fruit pie filling works with this recipe! I've made this pie a ton of times with blueberry pie filling too)

    Step-by-Step Instructions

    Step 1 - Mix: To a mixing bowl, add the softened cream cheese and mix with an electric hand mixer on high until smooth. Add the condensed milk and mix again until smooth. Add the lemon juice, vanilla extract, a pinch of salt, and mix one more.

    Step 2 - Assemble: Pour the pie filling into the graham cracker crust and chill in the fridge for 4-6 hours or overnight to set. Top with the cherry pie filling, just before serving.

    Storage & Leftovers

    Store any leftover pie covered in the fridge for up to 1 week. It can also be stored in the freezer for up to 3 months, however it's recommended to freeze without the cherry pie filling on top.

    This no bake cherry cream cheese pie is easy to make with simple ingredients and such a refreshing and delicious summer dessert!


    Ingredients

    Units
    • Store-bought graham cracker pie crust: one (or make a homemade graham cracker crust)
    • Cream cheese: 8 ounces, room temperature
    • Condensed milk: one 14 ounce can
    • Fresh lemon juice: ½ cup
    • Vanilla extract: 1 teaspoon
    • Canned cherry pie filling: one 21 ounce can

    Instructions

    1. Mix: To a mixing bowl, add the softened cream cheese and mix with an electric hand mixer on high until smooth. Add the condensed milk and mix again until smooth. Add the lemon juice, vanilla extract, a pinch of salt, and mix one more.

    Notes

    The cream cheese needs to be room temperature/softened to be able to mix easy and be smooth, without causing any lumps in the pie. 

    Fresh lemon juice from real lemons makes a huge difference in this recipe for two reasons. It tastes much better in the pie and it helps the pie set and solidify better than pre-squeezed lemon juice from a bottle.

    You can serve the pie with any flavour of canned fruit pie filling. Fresh fruit also tastes great!
