    Cherry Muffins with Cherry Pie Filling

    These quick and easy 3 ingredient cherry muffins with cherry pie filling are soft, fluffy, moist, and delicious! The best pick-me-up snack, grab-and-go breakfast and a tasty dessert.

    I've never been a big fan of cherry desserts, but these cherry muffins totally changed me! I make them all the time for the work week for a simple breakfast or snack/treat after lunch.

    This muffin recipe would be a fun treat to make with young kids because they're so simple to make with just a few ingredients and simple steps!

    Ingredients

    • Box Vanilla Cake Mix (white and yellow cake mix also works)
    • Eggs
    • Canned Cherry Pie Filling

    Step-by-Step Instructions

    Step 1 - Prepare: Preheat the oven to 350°F and line a muffin pan with muffin liners.

    Step 2 - Mix: To a large bowl, combine the cake mix and eggs with an electric hand mixer just until combined (don't overmix). Fold in ¾ of the cherry pie filling (just slightly fold them in so the batter is still mostly white/yellow with some streaks of red).

    Step 3 - Bake: Fill each muffin liner ¾ full of the muffin batter and then drop a couple more cherries from the leftover pie filling on top of each muffin, slightly mixing them in with a toothpick. Bake on the middle rack for 18-20 minutes, until a toothpick comes out clean. Rest for 5-10 minutes before removing from the muffin pan.

    Storage

    Store in an airtight container at room temperature or refrigerate for up to 1 week. They can also be stored in the freezer for up to 3 months (typically I remove the muffin liner from them if I freeze them.

    These cherry muffins with cherry pie filling are quick and easy to make with a few ingredients and incredibly delicious any time of day!


    Ingredients

    • Vanilla Cake Mix: 1 box (15.25 ounces)
    • Eggs: 3
    • Canned Cherry Pie Filling: 1 can (21 ounces)


    Instructions

    1. Prepare: Preheat the oven to 350°F and line a muffin pan with muffin liners.

    Notes

    Avoid overmixing the muffin batter to avoid a dense muffin texture. 

    An ice cream scoop or cookie scoop with a trigger handle is a helpful way to scoop the muffin batter and ensure each muffin is the same size. 

    You can make these muffins with any canned fruit pie filling.
