- Eggs
- Lemon Juice
- Vanilla Cake Mix (or gold/yellow cake mix or white cake mix also works)
- Canned Blueberry Pie Filling (or you can also use frozen blueberries/fresh blueberries)

Step-by-Step Instructions
Step 1 - Prepare: Preheat the oven to 350° F and line a muffin pan with muffin liners.

Step 2 - Mix: To a mixing bowl, whisk the eggs, then add the lemon juice and cake mix and mix with an electric hand mixer. Add the blueberry pie filling and fold in with a spatula (don't over mix, mix only a few times to keep the swirls of white and blue).



Step 3 - Bake: Fill the muffin liners ¾ full and bake for 18-20 minutes, until a toothpick comes out clean.

- Using an ice cream scoop to scoop the muffin batter will give you evenly sized muffins!
