    Easy Blueberry Muffins with Cake Mix

    These easy blueberry muffins with cake mix are made with only 4 ingredients! They're incredibly soft, fluffy, and the perfect quick breakfast, afternoon snack and late-night sweet treat.

    These are the easiest blueberry muffin recipe on the internet (and there's a lot) because these only require 4 simple ingredients...that's it!!

    They come together quickly and make for an easy grab and go breakfast and a great school snack for kids!

    Ingredients

    • Eggs
    • Lemon Juice
    • Vanilla Cake Mix (or gold/yellow cake mix or white cake mix also works)
    • Canned Blueberry Pie Filling (or you can also use frozen blueberries/fresh blueberries)

    Step-by-Step Instructions

    Step 1 - Prepare: Preheat the oven to 350° F and line a muffin pan with muffin liners.

    Step 2 - Mix: To a mixing bowl, whisk the eggs, then add the lemon juice and cake mix and mix with an electric hand mixer. Add the blueberry pie filling and fold in with a spatula (don't over mix, mix only a few times to keep the swirls of white and blue).

    Step 3 - Bake: Fill the muffin liners ¾ full and bake for 18-20 minutes, until a toothpick comes out clean.

    Helpful Tips

    • Using an ice cream scoop to scoop the muffin batter will give you evenly sized muffins!
    • Avoid overmixing the blueberry pie filling to avoid super dark muffins!

    These easy blueberry muffins with cake mix are bursting with blueberries, super fluffy, and very tasty!


    Ingredients

    • Eggs: 3
    • Lemon Juice: 1 tablespoon
    • Vanilla Cake Mix: 1 box (15.25 oz)
    • Canned Blueberry Pie Filling: 1 can (21 oz)
