Easy Blueberry Muffins with Cake Mix

Description

These easy blueberry muffins with cake mix are bursting with blueberries, super fluffy, and very tasty!


Ingredients

  • Eggs: 3
  • Lemon Juice: 1 tablespoon
  • Vanilla Cake Mix: 1 box (15.25 oz)
  • Canned Blueberry Pie Filling: 1 can (21 oz)


Instructions

  1. Step 1 - Prepare: Preheat the oven to 350° F and line a muffin pan with muffin liners.

  2. Step 2 - Mix: To a mixing bowl, whisk the eggs, then add the lemon juice and cake mix and mix with an electric hand mixer. Add the blueberry pie filling and fold in with a spatula (don't over mix, mix only a few times to keep the swirls of white and blue).

  3. Step 3 - Bake: Fill the muffin liners 3/4 full and bake for 18-20 minutes, until a toothpick comes out clean.

Notes

Using an ice cream scoop to scoop the muffin batter will give you evenly sized muffins!

Avoid overmixing the blueberry pie filling to avoid super dark muffins!
