    I am obsessed with this cobbler recipe, and you will be too! Honestly, cobblers aren't a big thing in Canada, at least not where I'm from, but I love them. I started experiencing with making cobblers years back because I had to know what all the rave was about, and now I get it...they're delicious! I may even like them more than pie (did I say that out loud?). Now my family loves them too...we were missing out!

    This cobbler is one of my favourites because I spent a lot of time testing it to ensure it had the perfect ratio of peach to blueberry. They're both delicious fruits and I wanted them both to shine in this dessert! Know what else I love about this recipe?     Recipe Ingredients

    • Canned Peaches
    • Frozen Blueberries
    • Sugar
    • Cinnamon
    • Cornstarch
    • Vanilla Extract
    • Salt
    • Butter
    • Yellow Cake Mix

    Kitchen Equipment

    • MIXING BOWL: You will need one medium-sized mixing bowl for everything except the cake mix and butter.
    • CAN OPENER: To open the canned peaches. 
    • STRAINER/COLANDER: For straining the peaches.
    • 9X13 BAKING DISH: For baking cobbler. 
    • MEASURING SPOONS AND CUPS: For measuring and adding the ingredients. 

    Step-by-Step Instructions

    1. Prepare: Preheat the oven to 350° F and grease a 9x13 baking dish with cooking spray or butter.
    2. Combine: In a mixing bowl, combine and mix the fruit mixture ingredients, then transfer it to the baking dish. Evenly sprinkle the cake mix over the fruit mix. Evenly distribute the sliced butter pieces on top of the cake mix. 
    3. Bake: Bake uncovered on the middle rack for 50-60 minutes until most of the cake mix powder has dissolved and the cobbler is golden with bubbling edges from the fruit. Allow the cobbler to rest and thicken for 10 minutes before serving.

    Storage and Leftovers 

    Leftovers can be stored covered in the fridge for up to 5 days. They can be reheated in the oven for 10-15 minutes at 350° F or microwaved at 10-second intervals until warm.

    Expert Tips

    • Drain the peaches. You should drain the peaches before baking them as too much liquid in the cans may make the cobbler soupy/runny.
    • Resting is key. Let the baked cobbler rest for at least 10 minutes to avoid a runny cobbler. This will help it thicken.
    • Don't forget the cornstarch! Cornstarch is a key ingredient for thickening cobblers and other fruit desserts.
    • Switch up the fruit. The best thing about cobbler is that you can pretty much make them with any common fruit, and they taste delicious! You can make a blueberry cobbler, peach cobbler, or cobblers with mixed berries, cherries, strawberries, etc. The list goes on!

    Ingredients

    Fruit Mixture

    • Canned Peaches, rinsed and drained: two 28 oz cans (about 5 cups)
    • Frozen Blueberries: 3 cups
    • Granulated Sugar: ½ cup
    • Cinnamon: ½ teaspoon
    • Cornstarch: 2 tablespoons
    • Vanilla Extract: 1 teaspoon
    • Salt: ¼ teaspoon

    Cobbler Topping

    • Yellow/Gold Cake Mix: 1 box
    • Butter, thinly sliced: ½ cup
    • Vanilla Ice Cream: Optional for topping

    Instructions

    1. Prepare: Preheat the oven to 350° F and grease a 9x13 baking dish with cooking spray or butter.

    Notes

    You can substitute the canned peaches for fresh peaches.

    You can use either canned peaches in light syrup or juice because you will be draining and rinsing the peaches so either works!

    Resting the cobbler will give it more time to thicken after it bakes.

    If the cobbler doesn't look golden enough, bake it for a few more minutes until it is.
