    This easy berry cobbler with cake mix is an incredibly delicious dessert any time of year, is quick to prepare with a few ingredients, and fun to make with the kiddos!

    If you know me, then you know I love fruit cobblers! Funny thing is, before I started food blogging, I had never even tried one before.

    Now I make them all the time, and my boyfriend loves them just as much as I do (he had never tried one before either)! He told me this berry cobbler reminds him of those yummy mixed berry Nutri-Grain bars from Kellogg's that we use to bring for school snacks growing up!

    Some of our favourite fruit cobbler recipes that I've made over the years that you may also enjoy is this peach cobbler with canned peaches, 3 ingredient apple cobbler with cake mix, and 3 ingredient cherry cobbler with cake mix.

    Ingredients

    • Frozen Mixed Berries
    • Granulated/White Sugar
    • Lemon Juice
    • Cornstarch
    • Boxed Yellow Cake Mix (white or vanilla cake mix works with this recipe too)

    Step-by-Step Instructions

    Step 1 - Prepare: Preheat the oven to 350°F.

    Step 2 - Mix: Add the mixed berries, sugar, cornstarch, and lemon juice to a large mixing bowl and mix until well incorporated.

    Step 3 - Assemble: In a 9x13 baking dish, evenly distribute the berries. Then, sprinkle the cake mix over the berries and scatter the slices of butter on top of the cake mix.

    Step 4 - Bake: Bake uncovered on the middle rack for 45-55 minutes until the top is golden brown. Let it rest for 10 minutes before serving and serve with vanilla ice cream, if desired.

    Storage and Leftovers

    Store any leftovers covered tightly with tin foil or plastic wrap (once room temperature) in the fridge for up to 1 week.

    Helpful Tips

    • Wait at least 10 minutes before serving the baked cobbler to avoid it being runny. Rest time will help it set and thicken.
    • Some people prefer to melt the butter and pour it over the cake mix, while others like to slice the butter. Either works!
    • Add more lemon juice to the berries if you find there is a lot of cornstarch present after mixing.
