Easy Berry Cobbler with Cake Mix

Description

This easy berry cobbler with cake mix is fruity, delicious, and so easy to make!


Ingredients

Units

  • Frozen Mixed Berries: 2 pounds
  • Granulated Sugar: 1/2 cup
  • Lemon Juice: 2 tablespoons
  • Cornstarch: 2 tablespoons
  • Boxed Yellow Cake Mix: 1 box (15.25 oz)
  • Butter: 1/2 cup, thinly sliced
  • Vanilla Ice Cream: optional for serving


Instructions

  1. Prepare: Preheat the oven to 350°F.
  2. Mix: Add the mixed berries, sugar, cornstarch, and lemon juice to a large mixing bowl and mix until well incorporated.
  3. Assemble: In a 9x13 baking dish, evenly distribute the berries. Then, sprinkle the cake mix over the berries and scatter the slices of butter on top of the cake mix.
  4. Bake: Bake uncovered on the middle rack for 45-55 minutes until the top is golden brown. Let it rest for 10 minutes before serving and serve with vanilla ice cream, if desired.

Notes

Wait at least 10 minutes before serving the baked cobbler to avoid it being runny. Rest time will help it set and thicken.

Some people prefer to melt the butter and pour it over the cake mix, while others like to slice the butter. Either works!

Add more lemon juice to the berries if you find there is a lot of cornstarch present after mixing.
