These pumpkin cake mix crinkle cookies are soft, chewy, and will melt in your mouth! Easy to make with 6 simple ingredients, these scrumptious fall cookies are ready in no time!

You can fnd these tasty pumpkin cookies on my countertop every fall season. They're literally fall as a cookie and make my house smell incredible!! Everyone loves how soft and pumpkiny they are!
I use my gingerbread cake mix crinkle cookie recipe as inspo for these pumpkin cookies cause those are a super popular cookie of mine and with a few simple swaps I was able to make this pumpkin version just as delicious!
Ingredients
- Spice Cake Mix
- Pumpkin Puree
- Vegetable Oil
- Vanilla Extract
- Eggs
- Powdered Sugar

Step-by-Step Instructions
Step 1 - Prepare: Preheat the oven to 350°F and prepare two baking sheets with parchment paper.
Step 2 - Mix: To a large bowl, mix the cake mix, pumpkin puree, vegetable oil, vanilla, and eggs with an electric hand mixer. Chill for 30 minutes (this will make the batter easier to work with).


Step 3 - Bake:Â Scoop tablespoon-sized balls of batter and drop them into a separate bowl of powdered sugar. Once coated, roll in your hand for a few seconds until the excess powder has fallen off (it's normal for cracks to occur while you do this). Place 1 inch apart on the baking sheet and bake for 9-11 minutes.


Storage
Store leftovers at room temperature in an airtight container for up to a week. They can also be stored in the fridge if preffered or in the freezer, for up to three months.

Notes
The cookie batter can be a bit tricky to handle, but chilling it in the fridge for 30 minutes helps significantly!Â
An ice cream or cookie scoop is also very helpful for plopping the batter into the powdered sugar as the batter can be a bit tough to work with.Â
Sometimes I like to add some pumpkin pie spice but it's really not necessary because the box of spice cake mix has the same ingredients in it as pumpkin pie spice. I find it helps a bit with the colour of the cookies (and hey who doesn't like some extra pumpkin spice in the fall!)
