    I love making these cookies during the holidays because they're so festive with their red Christmas colour, and the white powdered sugar reminds me of snow!

    I like to add them to my cookie trays along with other holiday cookies like these frosted gingerbread cookies, chocolate dipped shortbread cookies, and chocolate peppermint blossoms!

    They're also the perfect Valentine's Day cookie because of its pretty red colour and the best cookie for sending to school with your children, and making the night before because they're so simple to make!

    • Red Velvet Cake Mix: Boxed red velvet cake mix is used for the red velvet flavour and as a substitute for the typical dry ingredients you would use in a cookie recipe to make this recipe quick and easy.
    • Vegetable Oil: A flavourless oil like vegetable oil is key for cookies to ensure no off-putting flavour and adds moisture to the cookies.
    • Eggs: The eggs also add moisture and help make the cookies chewy.
    • Vanilla Extract: For flavour.
    • Powdered Sugar: For aesthetics and a hint of sweetness!

    Step-by-Step Instructions

    1. Prepare: Preheat the oven to 350 degrees Fahrenheit and prepare two baking sheets with parchment paper.

    2. Mix: To a large bowl, add and mix the cake mix, vegetable oil, eggs, and vanilla extract with an electric hand mixer on medium (the cookie dough will be sticky). Chill the dough for 30 minutes (this will help make it thick, less sticky, and easier to scoop).

    3. Bake: Add powdered sugar to a separate bowl and scoop and drop 1-inch balls of cookie dough into the bowl (they may not be perfectly shaped at this stage, but that's okay). Fully coat them with the powdered sugar and then roll them into balls using the palms of your hands (some cracks in the dough is normal). Place the cookies 1 inch apart on the baking sheets and bake for 9-11 minutes.

    Storage and Leftovers

    Store the cookies in an airtight container at room temperature for up to one week or in the freezer for up to 3 months.

    Kitchen Equipment

    • Mixing Bowls: You will need one to make the cookie dough and another for the powdered sugar to roll the cookies in.
    • Electric Hand Mixer: For mixing the cooking batter.
    • Cookie Scoop: A cookie scoop will help you scoop the cookies and drop them into the powdered sugar easily, but its not required and you can alternatively scoop with a spoon and push it off with your finger.

    • Chill the dough. I know it takes some time, but it's so worth it! Chilling the cookie dough will make it much easier to work with. It'll be less sticky and much thicker!
    • Use a cookie scoop. Consider using a cookie scoop because it will help you scoop the dough and pop it out easily. It also ensures your cookies are the same shape every time!
    • Make perfectly shaped cookies. As soon as the cookies come out of the oven, use a drinking glass with a rim wider than the cookies and cup each cookie, moving it in circular motions, and you will get perfectly shaped cookies every time!
