    Easy Butter Pecan Cake Mix Cookies

    These easy butter pecan cake mix cookies are quick to make with just 5 simple ingredients! They're soft, chewy, incredibly delicious, and the best fall cookie recipe!

    If you like butter tart squares and pecan butter tarts, then you're going to these cookies! They're a fun twist on a traditional pecan butter tart in cookie form!

    People can never believe these are made with a simple box of cake mix, because they truly taste like bakery style cookies!

    Ingredients

    • Eggs
    • Vegtable Oil
    • Vanilla Cake Mix (or white or yellow cake mix also works!)
    • Pecans
    • Toffee Bits, like Heath or Skor (these are optional, but so worth it!)

    Step-by-Step Instructions

    Step 1 - Prepare: Preheat the oven to 350° F and line two baking sheets with parchment paper.

    Step 2 - Mix: To a bowl, combine and mix the eggs, vegetable oil, and cake mix with an electric hand mixer. Fold in the pecans and toffee bites.

    Step 3 - Bake: Scoop tablespoon-sized balls of cookie dough and place them on the baking sheets one inch apart from each other and bake for 9-11 minutes.

    Storage and Leftovers

    Store in an airtight container at room temperature for up to one week or in the freezer for up to three months.

    Notes

    Consider toasting the pecans for a toasted nutty flavour. Just ensure they are room temperature before adding to the cookie dough/batter. 

    To make perfectly shaped cookies, flip a cup upside down over the cookies and move it in circular motions until the cookies are perfectly circular.
