    These easy spice cake mix cookies are simple to make with only 5 ingredients! They're soft, chewy, packed with cinnamon spice, and the perfect fall dessert!

    I always look forward to making these spice cookies in the fall! The spice flavour puts you in the fall mood and gets you excited for the season just like my spice cake pumpkin cookies and my apple spice cake!

    Anytime I make a batch of these cookies, they're eaten quickly! Everyone loves the soft texture and cracks in them, just like my other crinkle cookies including these chocolate crinkle cookies with cake mix, gingerbread crinkle cookies with cake mix, and these red velvet cake mix crinkle cookies!

    Ingredients

    • Boxed Spice Cake Mix
    • Eggs
    • Vegetable Oil
    • Vanilla Extract
    • Sugar

    Step-by-Step Instructions

    Step 1 - Prepare: Preheat the oven to 350° F and prepare two baking sheets with parchment paper.

    Step 2 - Mix: In a large mixing bowl, combine and mix the cake mix, eggs, vegetable oil, and vanilla extract with an electric hand mixer until combined (it will be quite thick and sticky). Chill in the fridge for 30 minutes to help reduce the stickiness and make it easier to handle.

    Step 3 - Bake: Add the sugar to a separate bowl and scoop the dough into tablespoon-sized dough balls and toss them into the sugar to coat. Next, roll into balls and place them 2 inches apart on the baking sheets and bake for 9-11 minutes.

    Storage

    Store in an airtight container at room temperature (out of any heat or sun) for up to 1 week or in the freezer for up to 3 months.

    Helpful Tips

    • A cookie scoop is really helpful for scooping the cookie dough because it can be quite sticky.
    • Chill the dough after making it to help with the stickiness of it.
    • An electric hand mixer is the way to go for making the cookie dough because it's on the thicker so mixing it needs a bit of power behind it.
    • If the cookies are puffier than you like, then just bang the cookie sheet on the counter as soon as they come out of the oven to help flatten them (or press down on the cookies with the back of a spoon).

    Why are my cookies cakey/puffy?

    These cookies have a soft, light and fluffy texture, however flattening them with a spoon or tapping the baking sheets on the counter after they bake will flatten them, making them a thinner cookie with a chewy texture.

    Why is my cookie dough sticky?

    This recipe has a stickier cookie dough texture but chilling the dough after making if and before baking will reduce the stickiness.
