Description

These easy spice cake mix cookies are soft, delicious, and the perfect fall treat!

Ingredients

Units
  • Spice Cake Mix: 1 box (15.25 oz)
  • Eggs: 2
  • Vegetable Oil: 1/2 cup
  • Vanilla Extract: 1 teaspoon
  • Sugar: 1/2 cup

Instructions

  1. Prepare: Preheat the oven to 350° F and prepare two baking sheets with parchment paper.

  2. Mix: In a large mixing bowl, combine and mix the cake mix, eggs, vegetable oil, and vanilla extract with an electric hand mixer until combined (it will be quite thick and sticky). Chill in the fridge for 30 minutes to help reduce the stickiness and make it easier to handle.
  3. Bake: Add the sugar to a separate bowl and scoop the dough into tablespoon-sized dough balls and toss them into the sugar to coat. Next, roll into balls and place them 2 inches apart on the baking sheets and bake for 9-11 minutes.

Notes

A cookie scoop is really helpful for scooping the cookie dough because it can be quite sticky.

Chill the dough after making it to help with the stickiness of it.

An electric hand mixer is the way to go for making the cookie dough because it's on the thicker so mixing it needs a bit of power behind it.

If the cookies are puffier than you like, then just bang the cookie sheet on the counter as soon as they come out of the oven to help flatten them (or press down on the cookies with the back of a spoon).
