This spice cake is one of my favourite desserts to make during the fall. It makes my house smell amazing and it's incredibly festive from the spiced flavour and delicious apples!

It's incredibly moist, and hard not to have a second slice! I also use my highly popular cream cheese frosting to frost it and it pairs perfectly with the cake! Everyone loves it and always requests it at Thanksgiving!

    Ingredients

    • Eggs
    • Canned Apple Pie Filling
    • Boxed Spice Cake Mix
    • Cream Cheese
    • Butter
    • Powdered/Confectioners Sugar

See the recipe card below for the ingredient measurements.

    Step-by-Step Instructions

Step 1 - Prepare: Prepare the oven to 350 degrees Fahrenheit and grease a 9x13 baking dish with cooking spray.

Step 2 - Mix: Whisk the eggs in a large bowl. Add the canned apple pie filling and the spice cake mix and mix with a spoon until combined.

Step 3 - Bake: Transfer the cake batter to the baking dish and bake on the middle rack for 28-30 minutes or until a toothpick comes out clean.

Step 4 - Frost: While the cake bakes, make the frosting by combining the softened cream cheese and butter in a separate bowl and mix on high speed until light and fluffy. Add the powdered sugar and mix on low speed until smooth. Frost the cake once the cake is completely cooled, then slice into pieces and serve.

    Storage and Leftovers

Store any leftovers covered with plastic wrap (once room temperature) in the fridge for up to 1 week. You may also want to stick a few toothpicks into the cake so the cream cheese doesn't stick to the plastic wrap.

    Recipe Tips & Notes

    • Consider roughly chopping the canned apples before adding them to the cake batter to avoid big chunks of apple in the cake slices.
    • You don't need an electric hand mixer for this cake!
    • You'll know when the cake is ready when you poke it with a toothpick and it comes out clean.
    • Refrain from frosting the cake until it's completely cooled, otherwise the frosting will melt off the cake.
    • Make this recipe even easier by using store-bought frosting!
    • Consider topping the cake with chopped nuts, such as walnuts or pecans, to add a decorative touch and enhance its presentation. Even better if you toast them before hand too (just make sure they've cooled down before sprinkling them on top).

    Frequently Asked Questions

    Why is my cake runny?

This can happen if it doesn't bake long enough. Sticking a toothpick into the middle of the cake will help you determine if its baked. If it comes out clean its baked.

    Why is my cake dry?

If it's dry, it may have overbaked. After 30 minutes of resting, you can remove the cake from it's dish and transfer it to a cooling rack so it can release it's heat easier and cool down faster.
