Make this quick blueberry peach cobbler with yellow cake mix for your next dessert!

Fruit Mixture
- Canned Peaches, rinsed and drained: two 28 oz cans (about 5 cups)
- Frozen Blueberries: 3 cups
- Granulated Sugar: 1/2 cup
- Cinnamon: 1/2 teaspoon
- Cornstarch: 2 tablespoons
- Vanilla Extract: 1 teaspoon
- Salt: 1/4 teaspoon
Cobbler Topping
- Yellow/Gold Cake Mix: 1 box
- Butter, thinly sliced: 1/2 cup
- Vanilla Ice Cream: Optional for topping
Instructions
- Prepare: Preheat the oven to 350° F and grease a 9x13 baking dish with cooking spray or butter.
- Combine: In a mixing bowl, combine and mix the fruit mixture ingredients, then transfer it to the baking dish. Evenly sprinkle the cake mix over the fruit mix. Evenly distribute the sliced butter pieces on top of the cake mix.
- Bake: Bake uncovered on the middle rack for 50-60 minutes until most of the cake mix powder has dissolved and the cobbler is golden with bubbling edges from the fruit. Allow the cobbler to rest and thicken for 10 minutes before serving.
Notes
You can substitute the canned peaches for fresh peaches.
You can use either canned peaches in light syrup or juice because you will be draining and rinsing the peaches so either works!
Resting the cobbler will give it more time to thicken after it bakes.
If the cobbler doesn't look golden enough, bake it for a few more minutes until it is.
