    These 3 ingredient cake mix banana muffins are quick and easy to prep in just a matter of 5 minutes! They're soft, fluffy, and a delicious breakfast, snack and dessert!

    These are quite the staple in my house because they're a perfectly simple grab-and-go breakfast on a busy morning, an easy snack or a late-night treat when I'm craving something sweet!

    Ingredients

    • Ripe Bananas
    • Eggs
    • Boxed Yellow Cake Mix
    • Optional: Sprinkle the top of the muffins with brown sugar before baking, fold chocolate chips or nuts (like pecans or walnuts) into the batter, and/or add a pinch of cinnamon to the batter for additional flavour and texture.

    Step-by-Step Instructions

    Step 1 - Prepare: Preheat the oven to 350°F and line a muffin pan with muffin paper liners.

    Step 2 - Mix: To a large bowl, mash the bananas with a fork. Add the eggs and cake mix and mix with an electric hand mixer just until combined (don't over mix).

    Step 3 - Bake: Fill the muffin tins ¾ full with the muffin batter and bake them in the preheated oven on the middle rack for 15-17 minutes, until a toothpick comes out clean.

    Storage

    Store any leftover muffins in an airtight container at room temperature or in the refrigerator for up to one week. These can also be stored in the freezer for up to three months.

    • Bananas: 3 large or 4 small, very ripe and peeled
    • Eggs: 2
    • Yellow Cake Mix: 1 box (15.25 oz)


    Instructions
