Cherry Muffins with Cherry Pie Filling

Description

These cherry muffins with cherry pie filling are quick and easy to make with a few ingredients and incredibly delicious any time of day!


Ingredients

  • Vanilla Cake Mix: 1 box (15.25 ounces)
  • Eggs: 3
  • Canned Cherry Pie Filling: 1 can (21 ounces)


Instructions

  1. Prepare: Preheat the oven to 350°F and line a muffin pan with muffin liners.
  2. Mix: To a large bowl, combine the cake mix and eggs with an electric hand mixer just until combined (don't overmix). Fold in 3/4 of the cherry pie filling (just slightly fold them in so the batter is still mostly white/yellow with some streaks of red).
  3. Bake: Fill each muffin liner 3/4 full of the muffin batter and then drop a couple more cherries from the leftover pie filling on top of each muffin, slightly mixing them in with a toothpick. Bake on the middle rack for 18-20 minutes, until a toothpick comes out clean. Rest for 5-10 minutes before removing from the muffin pan.

Notes

Avoid overmixing the muffin batter to avoid a dense muffin texture. 

An ice cream scoop or cookie scoop with a trigger handle is a helpful way to scoop the muffin batter and ensure each muffin is the same size. 

You can make these muffins with any canned fruit pie filling.
