    Step-by-Step Instructions

    1. Prepare: Preheat the oven to 400°F and prepare a baking sheet with tin foil and cooking spray.
    2. Toast: Add the baguette slices to the baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toast for 1-2 minutes on each side until golden.
    3. Assemble: To each crostini, layer with a thin slice of mozzarella, 2-3 cherry tomato halves, balsamic glaze drizzle, and garnish with basil.

    Expert Tips

    • Slice on an angle. Slicing the bread on an angle will give each slice more space for all those delicious tomatoes!
    • Slice the tomatoes. If you keep them whole and take a bite they may burst everywhere and cause a bit of a mess so it's best to slice them in half!
    • Balsamic glaze, not balsamic vinegar. Balsamic glaze is nice and thick, so it holds its form when drizzled on the crostinis. You can buy balsamic glaze at most grocery stores or easily make balsamic glaze yourself.

    Serving Suggestions

    Serve the crostini appetizer with pasta dishes like cherry tomato sauce pasta, pesto chicken rigatoni, or penne pasta bake with ricotta and spinach. These caprese crostini bites also taste delicious as an appetizer with grilled steak dinners with side dishes like roasted baby potatoes or garlic mashed potatoes next to some flavorful garlic asparagus.

    Ingredients

    Units

    • Fresh Baguette, cut into ½ inch slices: 1 loaf
    • Olive Oil: 2 tablespoons
    • Salt: ½ teaspoon
    • Pepper: ¼ teaspoon
    • Fresh Mozzarella Ball: 8 oz
    • Cherry Tomatoes, sliced in half: 1 cup
    • Balsamic Glaze: ¼ cup
    • Basil, chopped: ¼ cup

    Notes

    You can use standard brick mozzarella if you can't find fresh!
