    Step-by-Step Instructions

    1. Prepare: Preheat the oven to 400 degrees Fahrenheit and prepare a baking sheet with tin foil and cooking spray. Distribute the baguette slices on the baking sheet and drizzle with olive oil and a ¼ teaspoon of salt and pepper.
    2. Make the artichoke spread: To a bowl, combine and mix the artichoke, mayo, parmesan, garlic, and ¼ teaspoon of salt.
    3. Bake: Top each baguette slice with the artichoke spread and bake on the middle rack for 4-5 minutes until the tops golden slightly. Remove from oven and garnish with fresh parsley.

    Storage and Leftovers 

    Any leftovers can be stored in an airtight container and kept in the fridge for up to 5 days. You can reheat leftovers in the microwave at 10-second intervals or rewarm in the oven on a baking sheet at 400 degrees Fahrenheit for a few minutes.

    Ingredients

    • Baguette: 1, cut into ½ inch slices
    • Olive Oil: 2 tablespoons
    • Salt: ½ teaspoon
    • Pepper: ¼ teaspoon
    • Canned Artichoke Hearts: 14 oz, drained & roughly chopped
    • Mayonnaise: 10 tablespoons
    • Parmesan Cheese: ¾ cup
    • Garlic Clove: 1, minced or finely shredded
    • Fresh Parsley: roughly chopped, for garnishing


    Instructions

    1. Prepare: Preheat the oven to 400 degrees Fahrenheit and prepare a baking sheet with tin foil and cooking spray. Distribute the baguette slices on the baking sheet and drizzle with olive oil and a ¼ teaspoon of salt and pepper.

    Shredded parmesan works best. You can use grated parmesan cheese, but freshly shredded parmesan melts much easier and gives you less grainy texture in every bite.

    Don't forget to drain your artichokes. Draining the artichokes is key to ensuring the spread isn't runny.

    Parsley makes a difference. Not only does parsley make a difference but fresh parsley does! This bruschetta is quite heavy with creamy mayo and cheese, so adding some fresh herbs brightens up this recipe with some fresh flavor and bright color.
