These easy caramel apple cookies are soft, chewy, and an incredibly delicious fall treat! With simple pantry staples and a one-bowl recipe, these tasty cookies come together quickly!

I have been making these apple spice cookies for years during the fall. They're the perfect sweet treat with a warm cup of tea after dinner every night! I have to make double the batch usually cause they go quick!
I like making them for Thanksgiving too and everyone always compliments how flavourful and yummy they are with their crisp edges and soft center.
Ingredients
- Butter
- Sugar (brown and granulated)
- Eggs
- Flour
- Baking Soda
- Apples (any work, but I typically use granny smith or another type that's crisp)
- Toffee/Caramel Bits (such as Heath or Chipits)

Step-by-Step Instructions
Step 1 - Prepare: Preheat the oven to 350° F and prepare two baking sheets with parchment paper.
Step 2 - Mix: In a large mixing bowl, add the softened butter, brown and granulated sugars. Beat with an electric mixer until fluffy and then add the eggs and mix again. Add the flour, baking soda, and a pinch of salt and mix until combined. Fold in the diced apples and toffee bits using a rubber spatula.




Step 3 - Bake: Roll dough into tablespoon-sized balls and place them an inch apart on the baking sheets and them bake for 7-10 minutes, until the edges are golden and center is set. Sprinkle a pinch of toffee bites over each cookie once you take them out of the oven. Once room temperature, store in the fridge.


Storage
Once the cookies have cooled down from baking, they should be stored in the fridge because if left at room temperature, they can turn rotten from the apples.

Notes
The apples give off a lot of moisture, so be sure to store them in the fridge so they don't become wet. They also need to be stored in the fridge so the apples don't become rotten.Â
If you want the cookies to be perfectly shaped circles, use a cookie cutter or the rim of a glass to shape them while they're still hot from the oven.
