Description
These easy caramel apple cookies are soft and chewy and taste like fall! The best sweet treat during cozy season!
Ingredients
- Butter: 1 cup, softened
- Granulated Sugar: 3/4 cup
- Brown Sugar: 1 cup, packed
- Eggs: 2
- Flour: 2 cups
- Baking Soda: 1 teaspoon
- Apples: 1 large or 2 small, diced
- Toffee/Caramel Bits: 1/3 cup & extra for sprinkling on top
Instructions
- Prepare: Preheat the oven to 350° F and prepare two baking sheets with parchment paper.
- Mix: In a large mixing bowl, add the softened butter, brown and granulated sugars. Beat with an electric mixer until fluffy and then add the eggs and mix again. Add the flour, baking soda, and a pinch of salt and mix until combined. Fold in the diced apples and toffee bits using a rubber spatula.

Bake: Roll dough into tablespoon-sized balls and place them an inch apart on the baking sheets and them bake for 7-10 minutes, until the edges are golden and center is set. Sprinkle a pinch of toffee bites over each cookie once you take them out of the oven. Once room temperature, store in the fridge.
Notes
The apples give off a lot of moisture, so be sure to store them in the fridge so they don't become wet. They also need to be stored in the fridge so the apples don't become rotten.
If you want the cookies to be perfectly shaped circles, use a cookie cutter or the rim of a glass to shape them while they're still hot from the oven.
