    This easy chicken and bacon jalapeno popper dip is cheesy, creamy, and extremely delicious! It's a fun twist on jalapeno poppers and a tasty snack for sharing during the Super Bowl and dinner parties!

    Every time I make this dip I ask myself why I didn't make two batches because it goes quick anytime I bring it anywhere! It's always a hit at any Super Bowl party and I often find myself randomly craving it when I'm craving a snack!

    I tested this recipe multiple times and found just the right balance of all of the ingredients and let me tell you the combination of all these ingredients makes this dip incredibly tasty from flavour to texture and everything in between!

    The best part about this dip? It's made with simple ingredients you can find at any grocery store. Nothing fancy, so anyone can make it!

You can make it per the recipe or you can omit the meat to make it less heavy and make it a vegetarian option and you can also make it with a cheesy topping instead of the crushed crackers. I've had it each way and it's delicious any way you have it!

    Recipe Ingredients

    • Cream Cheese: softened cream cheese makes it incredibly creamy.
    • Mayonaise: makes the dip silky and rich.
    • Sour Cream: adds to the creaminess to the dip and makes it a bit tangy.
    • Garlic Powder: adds flavour that compliments the other ingredients in the recipe.
    • Salt & Pepper: to enhance the overall flavour of the dip.
    • Bacon: crispy bacon pieces add a ton of flavour to the dip.
    • Chicken: this recipe uses shredded rotisserie chicken because it's already cooked and easy to work with.
    • Jalapenos: diced jalapenos add colour, texture, flavour, and a little heat.
    • Cheddar Cheese: the shredded cheddar makes the dip super cheesy and delicious.
    • Crackers: crushed buttery crackers like Ritz give the top of the dip texture and flavour.
    • Parmesan: the parmesan gets mixed with the crackers for extra flavour (I know, there is quite a few ingredients here but it's super simple to make and so worth it!)
    • Butter: melted butter helps bind the crushed crackers and parmesan together and makes the topping flavourful and golden.

    Step-by-Step Instructions

    Step 1 - Prepare: Preheat the oven to 350 degrees Fahrenheit. Cook the bacon slices on a large pan on medium-high heat until crispy (about 10 minutes) and then chop them into small pieces once cooled. While those cook, shred the rotisserie chicken breasts in a bowl using two forks or an electric hand mixer.

    Step 2 - Mix: To a large bowl, combine and mix the softened cream cheese, mayo, sour cream, garlic powder, salt, and pepper with an electric hand mixer. Fold in the bacon pieces, chicken, jalapenos, and cheddar cheese and then transfer the dip to a small baking dish.

    Step 3 - Bake: To a small bowl, combine and mix the crushed crackers (crush them in a ziplock back with a meat tenderizer or rolling pin), parmesan and melted butter with a fork and then evenly sprinkle it on top of the dip. Bake the dip uncovered on the middle rack for 20-25 minutes or until the cracker topping is golden.

    Storage and Leftovers

    Any leftovers can be stored in the fridge for up to 1 week covered tightly in plastic wrap or tin foil (once cooled). It can be reheated in the oven uncovered at the same temperature for 10-15 minutes or until warm. Alternatively, you can reheat it in the microwave uncovered until warm.

    Kitchen Tools

    • Frying pan: for cooking the bacon.
    • Mixing bowls: one for shredding the chicken in, another for making the dip, and another for making the topping.
    • Electric hand mixer: for shredding the chicken and mixing the dip.
    • Cheese grater: for shredding the cheese.
    • Small baking dish: for baking the dip.
    • Meat Tenderizer: to crush the crackers. Alternatively, you could use a rolling pin.
    • Measuring spoons and cups: for measuring the ingredients.

    Helpful Tips

    • Use the chicken breasts. When taking apart the rotisserie chicken, I find it easiest to use the chicken breast portion of the chicken. It's a lot easier to transfer to a bowl and shred using a hand mixer. I'll usually just eat any leftover rotisserie chicken the next day in a sandwich or salad!
    • Consider variations for this dip. Sometimes I like to make this dip without the bacon and chicken because it speeds up the process and makes it a bit lighter yet still tastes incredible! Sometimes I'll even omit the cracker topping and just top it with some extra shredded cheddar cheese too!
    • Dice the jalapeno into small pieces. This will ensure the jalapeno is evenly distributed and will cook down easier while it bakes so it's not an overly crunchy dip.

    Yes, you can! If you prefer less spice, you can scoop out the seeds of the jalapenos or omit them entirely.

    This recipe uses rotisserie chicken, but you can also use cooked chicken breast if you prefer.

    It will last up to 1 week covered in the fridge.

    Ingredients

    Dip Mixture

    • Bacon: 6 slices
    • Rotisserie Chicken: 2 cups, shredded

    Topping Mixture

    • Ritz Crackers: 1 cup, crushed
    • Parmesan Cheese: ½ cup
    • Butter: ¼ cup, melted

    Instructions
