    I make this soup recipe a lot, especially after Christmas when I'm looking for a lighter soup after a week of eating way too much food! It's filling, healthy, and super delicious!

    Recipe Ingredients

    • OLIVE OIL: Olive oil is used to cook the turkey. 
    • GROUND TURKEY: You can use any type of turkey, like shredded turkey or leftover Christmas or Thanksgiving turkey, but ground turkey is used in this recipe because it’s easy to use and super lean for a healthier soup. 
    • VEGGIES: This turkey soup is packed with vegetables, including onion, garlic, celery, carrots, white potatoes, and diced canned tomatoes. 
    • CHICKEN BROTH: Chicken broth is the base of the soup and pairs well with the turkey and veggie flavors. 
    • SPICES: Garlic powder, oregano, and thyme are added to season and flavor the soup.
    • GREENS: Spinach and optional fresh parsley are included in the soup for color, texture and a complimenting flavor. 
    • SALT & PEPPER: A pinch of salt and pepper is included to enhance the flavor of the soup.

    Step-by-Step Instructions

    1. Sautee: Add the olive oil to a pan on medium-high heat. Add the turkey and cook it until it’s no longer pink. 
    2. Simmer: Add the cooked turkey and remaining ingredients to a crock pot and set the slow cooker to low. Cover the crock pot and let it cook for 8-10 hours before serving. 

    Storage and Leftovers 

    Store the soup in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months. 

    Expert Tips

    • Cut the veggies small. Dice the vegetables into small pieces to ensure they cook properly and are soft by the time the soup is ready. 
    • Keep the potato skin on. You can keep the potato skin on for extra nutrients and to save time if you prefer. 
    • Add the spinach last. The spinach doesn’t need hours to cook down so it can be added just before serving.

    How do you know when turkey is cooked? 

    When the turkey is no longer pink, the ground turkey is fully cooked. It takes about 5-10 minutes.

    How to know when the soup is cooked?

    The soup cooks for 8-10 hours in the crock pot, which gives the soup enough time for the flavors to emulsify and the veggies to soften.

    Serving Suggestions

    This turkey soup tastes delicious topped with crushed saltine crackers or a side of fresh sliced bread slathered in butter! It also pairs great with a leafy green side salad.

    This slow cooker ground turkey vegetable soup is healthy and filling, super delicious, and so easy to make!


    Ingredients

    • Olive Oil: 1 tablespoon
    • Ground Turkey: 1 pound
    • Garlic Cloves, minced: 3 cloves
    • Onion, diced: 1
    • Celery Sticks, diced: 2
    • Carrots, diced: 2
    • White Potatoes, peeled and chopped into small cubes: 3
    • Diced Tomatoes, drained: one 28 oz can
    • Chicken Broth: 8 cups
    • Salt: ½ teaspoon
    • Pepper: ¼ teaspoon
    • Garlic Powder: ½ teaspoon
    • Dried Oregano: ½ teaspoon
    • Ground Thyme: ¼ teaspoon
    • Spinach, fresh or frozen: 3 cups
    • Fresh Parsley: optional for garnishing

    Instructions
