Description
This slow cooker ground turkey vegetable soup is healthy and filling, super delicious, and so easy to make!
Ingredients
- Olive Oil: 1 tablespoon
- Ground Turkey: 1 pound
- Garlic Cloves, minced: 3 cloves
- Onion, diced: 1
- Celery Sticks, diced: 2
- Carrots, diced: 2
- White Potatoes, peeled and chopped into small cubes: 3
- Diced Tomatoes, drained: one 28 oz can
- Chicken Broth: 8 cups
- Salt: 1/2 teaspoon
- Pepper: 1/4 teaspoon
- Garlic Powder: 1/2 teaspoon
- Dried Oregano: 1/2 teaspoon
- Ground Thyme: 1/4 teaspoon
- Spinach, fresh or frozen: 3 cups
- Fresh Parsley: optional for garnishing
Instructions
- Sautee: Add the olive oil to a pan on medium-high heat. Add the turkey and cook it until it’s no longer pink.
- Simmer: Add the cooked turkey and remaining ingredients to a crock pot and set the slow cooker to low. Cover the crock pot and let it cook for 8-10 hours before serving.
