Step-by-Step Instructions
- Cook the pasta: Cook the penne according to the instructions on the package.
- Sautee: To a large frying pan on medium heat, add 2 tablespoons of olive oil and 2 tablespoons of butter. Add the shallots and garlic and cook until the shallots are soft. Season the shrimp with salt, pepper, and chili flakes and add it to the pan, cooking until the shrimp is cooked (it should be firm and pink in color). Transfer the mixture to a plate and set it aside.
- Combine: Add the wine, lemon juice, and reserved pasta water to the pan and bring them to a boil. Add 2 tablespoons of olive oil and 2 tablespoons of butter. Transfer the shrimp (and all of the juices), parsley, and the strained penne to the pan. Mix until the pasta is fully coated.

- Penne: 1 pound
- Olive Oil: 4 tablespoons
- Butter: 4 tablespoons
- Shallots, thinly sliced: 3
- Garlic Cloves, minced: 3
- Large Shrimp, peeled: 1 pound
- Salt: 1 teaspoon
- Pepper: 1 teaspoon
- White Wine: ¾ cup
- Lemon Juice: from 1 lemon
- Reserved Pasta Water: ¼ cup
- Dried Red Pepper Chili Flakes: 1 and ½ teaspoons
- Fresh Parsley, chopped: 1 cup
- Optional Parmesan Cheese: for serving
