This is one of my favourite fall desserts to make when i'm in a hurry because it comes together quickly and tastes amazing! No need to make the cake from scratch which saves SO much time in the kitchen.
Everyone always loves it. Pumpkin and cinnamon rolls? Who wouldn't!
Ingredients
- Canned Cinnamon Rolls (I use the Pillsbury ones)

- Eggs
- Milk
- Yellow Cake Mix (vanilla or white cake mix also works)
- Butter
- Brown Sugar
- Pumpkin Pie Spice
See the recipe card below for the ingredient measurements.
Step-by-Step Instructions
Step 1 - Prepare: Preheat the oven to 350°F and grease a 9x13 baking dish with cooking spray.
Step 2 - Assemble:Â Evenly distribute the cinnamon roll pieces in the baking dish. In a bowl, combine the pumpkin puree, eggs, milk, half of the pumpkin pie spice and half of the brown sugar with a whisk and pour the mixture over the cinnamon rolls. Sprinkle over the cake mix and then top with slices of butter. In a separate small bowl, mix the remaining brown sugar and pumpkin pie spice together and sprinkle on top.

Step 3 - Bake: Bake uncovered on the middle rack for 40-50 minutes, until golden (do not let it get too dark or it will be dry and not gooey). Let it rest for 5-10 minutes, then drizzle on the icing from the cinnamon roll packages.

Storage
Store leftovers covered tightly in plastic wrap (once room temperature) in the fridge for up to 1 week. You can also freeze in airtight containers for up to 3 months.
