    This is a weeknight dinner staple in my house! I make it at least once a week because it's so easy to make and the perfect dinner recipe when you're looking for something that is stress-free and quick to make just like this lemon Bousin pasta I love too!

    I also love to serve it when we're hosting guests for dinner. Everyone loves how silky and flavorful it is! Another plus with this recipe is how lightened up it is. I love pasta (I'm half Italian what can I say!!) but in the summer (which is when I typically make this dish) I like lightened up pasta dishes like this pesto rigatoni and cherry tomato spaghetti recipe too!

    • PARMESAN CHEESE

    Step-by-Step Instructions

    1. Cook the pasta: Cook the penne according to the instructions on the package.
    2. Sautee: To a large frying pan on medium heat, add 2 tablespoons of olive oil and 2 tablespoons of butter. Add the shallots and garlic and cook until the shallots are soft. Season the shrimp with salt, pepper, and chili flakes and add it to the pan, cooking until the shrimp is cooked (it should be firm and pink in color). Transfer the mixture to a plate and set it aside. 
    3. Combine: Add the wine, lemon juice, and reserved pasta water to the pan and bring them to a boil. Add 2 tablespoons of olive oil and 2 tablespoons of butter. Transfer the shrimp (and all of the juices), parsley, and the strained penne to the pan. Mix until the pasta is fully coated.

    Helpful Tips

    • Reserving some pasta water is key. It's what's gonna make this pasta silky smooth and keep it from going dry!
    • Keep an eye on the shrimp. The shrimp doesn't take long to cook, so to avoid overcooking it, you can aim to cook it for 2-3 minutes max! Once it starts to turn pink and firm it's ready!
    • Have patience with the onions. Cooking down onions can take a little time, but the flavour is worth it and no one likes crunchy onions in their pasta!

    Serving Suggestions

    Before serving this dish, serve your guests with an easy and delicious appetizer like a classic tomato bruschetta. This pasta recipe also pairs great with a light side salad or a fresh loaf of bread.

    Description

    This easy shrimp scampi penne pasta recipe is packed with flavor and super addicting!


    Ingredients

    Units
    • Penne: 1 pound
    • Olive Oil: 4 tablespoons
    • Butter: 4 tablespoons
    • Shallots, thinly sliced: 3
    • Garlic Cloves, minced: 3
    • Large Shrimp, peeled: 1 pound
    • Salt: 1 teaspoon
    • Pepper: 1 teaspoon
    • White Wine: ¾ cup
    • Lemon Juice: from 1 lemon
    • Reserved Pasta Water: ¼ cup
    • Dried Red Pepper Chili Flakes: 1 and ½ teaspoons
    • Fresh Parsley, chopped: 1 cup
    • Optional Parmesan Cheese: for serving

    Instructions

    1. Cook the pasta: Cook the penne according to the instructions on the package and reserve a ¼ cup of pasta water before draining.
    2. Sautee: To a large frying pan on medium heat, add 2 tablespoons of olive oil and 2 tablespoons of butter. Add the shallots and garlic and cook until the shallots are soft. Season the shrimp with salt, pepper, and chili flakes and add it to the pan, cooking until the shrimp is cooked (it should be firm and pink in color). Transfer the mixture to a plate and set it aside. 
    3. Combine: Add the wine, lemon juice, and reserved pasta water to the pan and bring them to a boil. Add 2 tablespoons of olive oil and 2 tablespoons of butter. Transfer the shrimp (and all of the juices), parsley, and the strained penne to the pan and mix until the pasta is fully coated.

    Notes

    You can substitute fresh parsley for dried if you don't have fresh. Use a ½ tablespoon worth.
