    These raisin oat cookies are one of my favourite cookies to make all year round when I'm craving something sweet! When guests come over I love pulling them out and serving them with some tea!

    They also always have a spot on my Christmas baking trays next to other holiday cookies like these frosted gingerbread cookies.

    Step-by-Step Instructions

    1. Prepare: Preheat the oven to 350 degrees Fahrenheit and prep two baking sheets with parchment paper.
    2. Dry ingredients: To a bowl, combine and mix the flour, cinnamon, nutmeg, ginger, baking soda, and salt.
    3. Wet ingredients: In a separate large bowl, combine and mix the softened butter, granulated sugar, and brown sugar. Add the eggs and vanilla and mix again.
    4. Combine the wet and dry: Slowly add the dry mixture to the wet mixture and mix just until combined. Use a large spoon or rubber spatula to fold the oats and the raisins.
    5. Bake: Scoop and roll one heaping tablespoon of cookie dough per cookie and place them 1 inch apart on the baking sheets. Bake the cookies for 9-11 minutes and wait a few minutes before transferring to a cooling rack.

    Storage and Leftovers

    Store the cookies in an airtight container at room temperature for up to a week or freeze for up to 3 months.

    • Chocolate Chips: Chocolate is always a good idea, so consider adding some chocolate chips to these cookies!
    • Walnuts: Some chopped walnuts or any type of nuts will add a tasty nutty flavour and texture.
    • Cranberries: Dried cranberries will taste delicious in these too!

    Can I use Allspice instead?

    Yes, if you don't have the listed spices, you can substitute with 2 teaspoons of all spice.

    Why are my oatmeal cookies dry?

    This will happen if they're over baked or baked at a higher temperature than specified.

    Why are my oatmeal cookies not spreading out?

    This can happen if there's too much flour, so be careful not to pack it. If you run into any issues, you can use a fork to press them down slightly to flatten them.

    How do you know when oatmeal cookies are done?

    They're done when they're slightly golden around the edges, but the tops of the cookies should still be light and not golden. If they're start looking golden, pull them out immediately.
