Description

This chewy oatmeal raisin spice cookies recipe is easy and delicious with a good amount of spice!


Ingredients

Units
  • Flour: 1 and 3/4 cup
  • Cinnamon: 1 and 1/2 teaspoons
  • Nutmeg: 1/2 teaspoon
  • Ginger: 1/4 teaspoon
  • Baking Soda: 1 teaspoon
  • Salt: 1/4 teaspoon
  • Butter: 1 cup, softened
  • Brown Sugar: 3/4 cup
  • Granulated Sugar: 1/2 cup
  • Eggs: 2
  • Vanilla Extract: 1 teaspoon
  • Quick Oats: 3 cups
  • Raisins: 1 cup

Instructions

  1. Prepare: Preheat the oven to 350 degrees Fahrenheit and prep two baking sheets with parchment paper.
  2. Dry ingredients: To a bowl, combine and mix the flour, cinnamon, nutmeg, ginger, baking soda, and salt.
  3. Wet ingredients: In a separate large bowl, combine and mix the softened butter, granulated sugar, and brown sugar. Add the eggs and vanilla and mix again.
  4. Combine the wet and dry: Slowly add the dry mixture to the wet mixture and mix just until combined. Use a large spoon or rubber spatula to fold the oats and then the raisins.
  5. Bake: Scoop and roll one heaping tablespoon of cookie dough per cookie and place them 1 inch apart on the baking sheets. Bake the cookies for 9-11 minutes and wait a few minutes before transferring to a cooling rack.

Notes

Spray your baking trays: An easy way to get the parchment paper to stop moving around is to spray the trays with cooking spray before placing the parchment paper on them and it'll stick right to the tray!

Use a cookie scoop: The batter is thick and a cookie scoop will help scoop the cookies out!

Make perfectly shaped cookies: Roll the cookies in the palms of your hands for perfectly shaped cookies before baking.

Flatten the cookies: if you want the cookies to be flatter, grease a fork or dip one into water and then press the cookies down.
