    Let me tell you, my life changed the day I decided to try making rice krispies in the microwave. I honestly can't believe it's taken me so long to make them this way.

    Growing up, my mom, sisters and I would always get the frying pan out and spend way too much time cooking them over the hot stovetop making a huge mess trying to keep all the cereal in the pan!

    Those are great memories and we always had fun making rice krispies the traditional way on the stove, but this new modern way of making them in the microwave is a quick and easy alternative that I love and I haven't gone back to the old way since!

    I love making these rice krispie squares all year long. They're such a simple and versatile dessert to bring to potlucks, dinner parties, or just having around the kitchen for a sweet treat after dinner.

    Ingredients

    • KELLOGG’S RICE KRISPIES CEREAL: For the rice krispies of course!! 
    • MINIATURE MARSHMALLOWS: For that sticky, chewy, gooey texture we all love. 
    • BUTTER: For structure and flavour. 
    • VANILLA EXTRACT: For that little hint of vanilla to balance everything out. 

    Instructions

    1. Combine: In a large microwave-safe bowl, add the marshmallows and butter. Microwave for 2 minutes. Stir for 1 minute. 
    2. Mix: Stir in the vanilla extract and rice krispie cereal. Scoop and evenly press mixture into a greased 9x13 baking dish.
    3. Serve: Allow to cool slightly, cut into squares, and serve.

    Storage

    Store in an airtight container for one week at room-temperature. They can also be stored in the freezer for up to three months.

    This will happen if too much butter is added.

    How long do rice krispie treats take to harden?

    To fully harden, 20-30 minutes. 

    How do you store rice krispie squares? 

    Store in an air-tight container in room temperature or the fridge for up to 1 week. 

    Can rice krispie squares be frozen? 

    Yes, freeze in an air-tight container for up to 3 months. If you are stacking them on top of each other, place a piece of parchment paper in between them so they don’t stick!

    Description

    These 5-minute microwave rice krispie squares are made with extra marshmallows for an extra chewy, gooey bite.


    Ingredients

    • Kellogg’s Rice Krispies Cereal (6 Cups)
    • Miniature Marshmallows (8 Cups)
    • Butter (¼ Cup)
    • Vanilla Extract (1 Teaspoon)

    Instructions

    1. Combine: In a large microwave-safe bowl, add the marshmallows and butter. Microwave for 2 minutes. Stir for 1 minute. 
    2. Mix: Stir in the vanilla extract and rice krispie cereal. Scoop and evenly press mixture into a greased 9x13 baking dish.

    Notes

    To easily press the rice krispie mixture into your pan without it stringing all over and getting sticky, use a greased spatula/buttered spatula or add a little bit of water to your spatula. 

    Cooking spray or butter will work to grease the baking dish. You could also use parchment/wax paper to line the dish with for easy removal of the squares if preferred. 

    For chewier rice krispies, add more marshmallows!! Standard rice krispie recipes use about 5 cups.. this one uses 8 cups. 

    Make colourful rice krispies using food colouring. This is especially a great idea for special occasions! Think valentines day, the fourth of July, Canada day, and so many more fun holidays!

    Consider swapping the cereal mixture to your favourite cereal! Some delicious options are fruity pebbles, cheerios, or make cocoa krispies.
