Description

These easy tortellini caprese skewers are a quick and incredibly delicious appetizer!


Ingredients

  • Cheese Tortellini: 18
  • Cherry or Grape Tomatoes: 18
  • Fresh Basil Leaves: 18
  • Mozzarella Bocconcini Balls/Pearls: 18
  • Balsamic Glaze (Optional)
  • Toothpicks

Instructions

  1. Boil the pasta: Cook the tortellini according to the package instructions. Drain and rinse the noodles with cold water until they are cold.

  2. Assemble the skewers: Thread a piece of tortellini, a tomato, a basil leaf, and a bocconcini ball onto a toothpick and sprinkle with a pinch of salt. Repeat these steps for each toothpick and drizzle with balsamic glaze (optional).

Notes

Avoid overcooking the tortellini otherwise it may be mushy and difficult to thread onto a toothpick.

Rinsing the tortellini with cold water until the noodles are cold to the touch is an important step to prevent them from overcooking.

Consider patting the ingredients dry with a paper towel if they're wet to avoid a messy presentation once you plate the skewers.

If the tortellini noodles start sticking to each other, drizzle them with olive oil to prevent sticking.
