This recipe for roasted cherry tomato bruschetta is an easy appetizer that'll impress your guests!


Ingredients

Units

Tomato Mixture

  • Cherry Tomatoes, sliced in half: 2 pints (4 cups)
  • Olive Oil: 2 tablespoons
  • Salt: 1/2 teaspoon
  • Pepper: 1/4 teaspoon
  • Balsamic Vinegar: 1 tablespoon

Bread Combination

  • Baguette, cut into 1/2 inch slices: 1
  • Olive Oil: 2 tablespoons
  • Salt: 1/2 teaspoon
  • Garlic Clove, sliced in half: 1

Garnishes

  • Fresh Basil, chopped: 1/4 cup

Instructions

  1. Preparation: Preheat the oven to 400° F and prepare two baking sheets with tin foil and cooking spray. 
  2. Tomato Mixture: Add the tomatoes to one of the baking sheets and drizzle with olive oil and sprinkle with salt and pepper. Roast for 18-20 minutes and then drizzle with balsamic vinegar after coming out of the oven. 
  3. Bread Combination: Distribute the baguette slices onto the second baking sheet and drizzle them with olive oil and salt. Toast in the oven for 1-2 minutes on each slide, until slightly golden. Rub the raw cut side of the garlic clove over the hot baguette slices.
  4. Assembly: Distribute the tomato mixture over each slice and garnish with basil.
