Tomato Mixture
- Cherry Tomatoes, sliced in half: 2 pints (4 cups)
- Olive Oil: 2 tablespoons
- Salt: 1/2 teaspoon
- Pepper: 1/4 teaspoon
- Balsamic Vinegar: 1 tablespoon
Bread Combination
- Baguette, cut into 1/2 inch slices: 1
- Olive Oil: 2 tablespoons
- Salt: 1/2 teaspoon
- Garlic Clove, sliced in half: 1
Garnishes
- Fresh Basil, chopped: 1/4 cup
Instructions
- Preparation: Preheat the oven to 400° F and prepare two baking sheets with tin foil and cooking spray.
- Tomato Mixture: Add the tomatoes to one of the baking sheets and drizzle with olive oil and sprinkle with salt and pepper. Roast for 18-20 minutes and then drizzle with balsamic vinegar after coming out of the oven.
- Bread Combination: Distribute the baguette slices onto the second baking sheet and drizzle them with olive oil and salt. Toast in the oven for 1-2 minutes on each slide, until slightly golden. Rub the raw cut side of the garlic clove over the hot baguette slices.
- Assembly: Distribute the tomato mixture over each slice and garnish with basil.
