    Easy Potatoes with Onion Soup Mix

    These easy potatoes with onion soup mix are quick to prepare with only 3 ingredients! They're a delicious and flavourful side dish that tastes great with any dinner recipe!

    These are one of my go-to weeknight side dishes because they're so easy to prepare with only three ingredients. It makes getting dinner on the table during the busyness of the work week so easy!

    Ingredients

    • Baby potatoes (this recipe uses yellow/Yukon gold, but any type works, even chopped russet potatoes if you don't have baby potatoes)
    • Olive oil
    • Lipton onion soup mix packet

    Step-by-Step Instructions

    Step 1 - Prepare: Preheat the oven to 400° F and grease a baking dish (or baking sheet) with cooking spray.

    Step 2 - Mix: Add the potatoes to the baking dish, drizzle with olive oil, and toss with the onion soup mix until the potatoes are fully coated.

    Step 3 - Bake: Bake uncovered on the middle rack for 30 minutes, flipping the potatoes halfway through.

    Storage and Leftovers

    Store any leftover potatoes in an airtight container in the fridge for up to one week. Reheat in the oven on a baking sheet at 350°F until warm (about 15 minutes) or in the microwave on a microwave-safe plate.

    Helpful Tips

    • Flip the potatoes halfway through baking so they cook evenly and crisp properly on all sides.
    • Fully coat the potatoes in olive oil to prevent them from sticking to the baking dish/sheet.
