Description

This pecan pie cobbler with cake mix is easy to make, super gooey, and incredibly delicious!


Ingredients

Units

Filling

  • Eggs: 8
  • Brown Sugar: 2 cups
  • Corn Syrup: 1 and 1/2 cups
  • Butter: 1/2 cup, melted and slightly cooled
  • Vanilla Extract: 1 teaspoon
  • Pecans: 2 cups, roughly chopped

Topping

  • Boxed Yellow Cake Mix: 1 box (15.25 oz)
  • Butter: 3/4 cup, sliced


Instructions

  1. Prepare - Preheat the oven to 350 degrees Fahrenheit and grease a 9x13 baking dish with cooking spray.
  2. Make the filling - In a large bowl, mix the eggs, brown sugar, corn syrup, melted butter, and vanilla extract with an electric hand mixer. Add the pecans, and pour the mixture into the baking dish.
  3. Make the topping - Sprinkle the cake mix over the top of the filling and then evenly distribute the butter slices on top.
  4. Bake - Bake the cobbler uncovered on the middle rack for 45-55 minutes until the top is golden and there's a slight giggle. Transfer to a cooling rack and rest for at least 1 hour before serving.

Notes

Cover the top of the cobbler evenly with butter to ensure the all the cake mix gets cooked, otherwise there may be some dry spots.

Let the cobbler rest for at least an hour otherwise it may be runny when you scoop into it! It should be gooey, but not runny.
