Description
This easy peach cobbler with cake mix is warm and gooey and will be ready in no time!
Ingredients
Peach mixture:
- canned peaches, strained and rinsed with cold water: two 28 oz cans (about 5 cups)
- granulated sugar: 1/2 cup
- brown sugar, packed: 1/4 cup
- cinnamon: 1/4 teaspoon
- nutmeg: 1/4 teaspoon
- cornstarch: 2 tablespoons
- vanilla extract: 1 teaspoon
- salt: 1/4 teaspoon
Cobbler topping:
- yellow cake mix: 1 box (15.25 oz)
- butter, sliced: 1/2 cup
Instructions
- Prepare: Preheat the oven to 350° F.
- Assemble: Mix the peach layer ingredients in a large bowl and add the mixture to a 9x13 baking dish. Evenly sprinkle the cake mix over the peach layer and then distribute the sliced butter pieces on top.
- Bake: Bake uncovered on the middle rack for 45-55 minutes until most of the cake mix powder has dissolved and the cobbler is golden with bubbling edges from the peaches.
- Serve: Allow the cobbler to rest and thicken for 10-15 minutes before serving. Top with a scoop of vanilla ice cream as desired.
Notes
Drain the peach juice from the cans to avoid making a runny cobbler!
Rinse the peaches with cold water to take control of your own flavor.
If a few areas of cake mix powder didn’t dissolve during baking, you can add a little water to these areas, and they will disappear into the cobbler topping!
Give the cobbler time to rest. It’s hard to resist but worth it! This will help the cobbler thicken. No one likes a runny cobbler!
