Description

This fresh cucumber dill dip with sour cream is quick and easy and perfect for sharing!


Ingredients

Units
  • Cream Cheese, softened: 8 oz
  • Sour Cream: 1 cup
  • Lemon Juice: 2 tablespoons
  • Garlic Clove, shredded or minced: 1
  • Salt: 1/2 teaspoon
  • Fresh Dill: 2 tablespoons
  • Cucumber, peeled, diced and patted dry: 1

Instructions

  1. Mix: To a bowl, mix the softened cream cheese and sour cream using an electric hand mixer on low until creamy. Add the lemon juice, garlic, and salt and mix again. Fold in the dill and cucumber.
  2. Chill: Chill the dip covered in plastic wrap for 1-2 hours or overnight before serving.

Notes

The more time this dip has to chill is better as chilling it gives it time for the flavor to intensify. It helps the cucumber release it's flavor and extract the oils from the fresh dill and garlic.

If the cream cheese isn't softened or at room temperature, you'll notice some clumps stick around when you mix it. If you forgot to leave the cream cheese out on the counter, there are a few simple ways you can soften cream cheese quickly.

After peeling and dicing the cucumber, you'll notice the diced cucumbers are very wet. It's recommended you use a paper towel to pat dry the cucumbers as much as possible before transferring them to the dip mixture to avoid a runny dip.
