Rotisserie Buffalo Chicken Dip

Description

This easy and addictive warm rotisserie buffalo chicken dip is the perfect party dip or game-day appetizer!


Ingredients

  • Cream Cheese, softened: one 8 oz package
  • Frank’s Buffalo Hot Sauce (or any brand): 3/4 cup
  • Ranch Dressing: 3/4 cup
  • Salt: 1/4 tsp
  • Pepper: 1/4 tsp
  • Rotisserie Chicken, shredded: 2 cups
  • Cheddar Cheese, shredded: 1 and 1/2 cups
  • Green Onions, sliced: optional for garnishing
  • Tortilla Chips, Baguette, Celery Sticks, etc.: for serving

Instructions

  1. Prepare: Preheat the oven to 350° F.
  2. Mix: To a mixing bowl, add the softened cream cheese and mix it with an electric hand mixer until smooth. Add the hot sauce, ranch, salt, and pepper and mix it again. Fold in the shredded rotisserie with a rubber spatula, and then fold in ½ cup of the cheddar cheese. 
  3. Bake: Transfer the dip mixture to a small baking dish, sprinkle the dip with the remaining cheddar cheese and bake the dip uncovered on the middle rack for 30-35 minutes. 
  4. Serve: Garnish with sliced green onions (optional) and serve warm with tortilla chips or veggies.

The easiest way to shred rotisserie chicken is to do it while the chicken is still warm, then break off the chicken into parts (leaving any bones and skin behind) and then shred it using either an electric hand mixer or two forks.

If the cream cheese isn’t softened, it will be difficult to handle and mix, so you want to ensure it’s at room temperature before using it.

If you find the dip is a bit too thick and might be too heavy to scoop after you’ve mixed the cream cheese with the liquid ingredients, add some more ranch or hot sauce to thin it out.
