Watermelon Basil Salad

Description

This watermelon basil salad is cold and crisp, sweet and juicy, and exactly what you need on your plate this summer!


Ingredients

  • Limes, Squeezed/Juiced: 2
  • Granulated Sugar: 1 Teaspoon
  • Watermelon, Cut into 1/2 Inch Cubes: 4-5 Pound Watermelon
  • Strawberries, Rinsed and Thinly Sliced: 2 Cups
  • Basil, Rinsed and Sliced/Chopped: 1/4 Cup
  • Goat Cheese, Crumbled: 1/4 Cup
  • Honey: 2 Tablespoons

Instructions

  1. Mix: In a small bowl, mix the lime juice and sugar together and set it aside. 
  2. Combine:  In a serving bowl, add the watermelon and strawberries. Pour the lime mixture over and give the salad a toss. 
  3. Serve: Garnish the salad with basil, crumbles of goat cheese, and a drizzle of honey. 

Notes

Plan to make this recipe the day of because if it’s made ahead of time (24 hours +), the juices will start releasing from the watermelon, making the salad runny and creating a soup-like consistency. 

Avoid mixing the salad once you’ve added the goat cheese because the cheese will start to disintegrate and lose its crumbly texture.
