Description

This delicious and decadent thumbprint cookies with jam recipe are the perfect treat to enjoy with a cup of tea or share with your friends and family over the holidays.


Ingredients

  • Butter, Softened/Room Temperature - 1 cup
  • Brown Sugar, Packed - 1/4 cup
  • Granulated Sugar - 1/2 Cup *Extra 3 Tablespoons For Rolling Cookies
  • Powdered/Confectioners Sugar - 1 Tablespoon
  • Egg - 1
  • Vanilla Extract - 2 Teaspoons
  • Salt - 1/4 Teaspoon
  • Flour - 2 And 1/2 cups
  • Baking Soda - 1/4 Teaspoon
  • Seedless Jam, Raspberry Or Your Favourite Flavour - 1/2 cup

Instructions

  1. Prepare: Preheat oven to 350° F or 177° C. Prepare 2 baking sheets with parchment paper and set aside. Add about 3 tablespoons worth of granulated sugar to a small bowl, and set aside.
  2. Wet mixture: Add the butter, granulated sugar and brown sugar in a medium or large bowl. Mix these ingredients until combined and the texture is light and fluffy. Mix in the powdered sugar. Add the egg and vanilla extract and mix again.
  3. Dry mixture: In a separate medium-sized bowl, whisk the flour, baking soda, and salt together.
  4. Combine: Add the dry ingredients to the wet ingredients and mix until combined. The texture should be crumbly.
  5. Refrigerate: With your hands, roughly form the cooking dough into a ball and place it in the fridge for 30 minutes.
  6. Form the cookie shape: Use a tablespoon to size your dough and roll it into a ball. Don’t make the balls larger than a tablespoon, or they'll be too big.  They'll seem too small, but they'll grow when they bake. Roll the ball in granulated sugar.
  7. Fill the cookies: Press down on the cookies with your thumb or the back of the tablespoon to create a hole for the jam. Fill the hole with jam.
  8. Bake: Bake for 10-12 minutes. If you see the edges become golden, pull the cookies out immediately.
