Description
This melt-in-your-mouth shortbread cookies recipe is sweet and buttery, with a crisp, crumbly bite.
Ingredients
- Butter, Softened (1 Cup)
- Granulated Sugar (1/4 Cup)
- Powdered Sugar (1/2 Cup + 1/3 Cup for Dusting)
- Salt (1/4 Teaspoon)
- Flour (2 & 1/3 Cup)
Instructions
- Prepare: Preheat oven to 325° F or 163° C. Prepare 2 baking sheets with parchment paper and set aside.
- Mix: In a medium-sized bowl, add the butter, granulated sugar, powdered sugar, and salt. Mix until just combined, about 1 minute. Add the flour, and mix until combined with the other ingredients.
- Chill: Place the cookie dough mixture in the fridge for 20-30 minutes.
- Roll out the dough: Form the cookie dough mixture into a rough ball and place it on a large piece of parchment paper on the counter. Add a second piece of parchment paper on top of the dough. Using a rolling pin, roll out the dough until 1/4 - 1/2 an inch thick.
- Shape the cookies: Use cookie cutters to create the cookies. Carefully transfer to the prepared baking sheets. Place leftover dough in a mixing bowl and place it back in the refrigerator.
- Bake: Bake the cookies for 10-12 minutes. Remove if you see any golden colour appearing. Once cookies are fully cooled, dust them with additional powdered sugar using a sieve strainer (optional).
