Description
This easy rustic Italian sausage tortellini soup with spinach is delicious and comforting during the cold seasons!
Ingredients
- Olive Oil: 1 tablespoon
- Onions, diced: 1
- Garlic Cloves, minced: 3 cloves
- Spicy Italian Sausage, removed from its casing: 1 pound (about 4 large sausages)
- Tomato Paste: 4 tablespoons
- Diced Tomatoes, drained: one 28 oz can
- Chicken Broth: 8 cups
- Salt: 1/2 teaspoon
- Pepper: 1/4 teaspoon
- Garlic Powder: 1/2 teaspoon
- Dried Oregano: 1 teaspoon
- Dried Basil: 1 teaspoon
- Cheese Tortellini, fresh or frozen: 18 oz (about 500 grams)
- Spinach, fresh or frozen: 3 cups
- Heavy Cream: 1/2 cup
Instructions
- Sautee: Add the olive oil to a pan on medium-high heat and cook the onions until soft and translucent, about 10 minutes. Add the garlic and cook for 1 minute. Spread the onions and garlic to the sides of the pot and add the sausage to the middle breaking it up until cooked, about 5 minutes.
- Simmer: Add the tomato paste, diced tomatoes, chicken broth, salt, pepper, garlic powder, oregano, and basil. Increase the heat and bring the pot to a boil, then reduce it to low and simmer for 20 minutes.
- Boil: Bring the pot back to a boil, add the tortellini and cook it according to the package instructions. Turn the heat off, stir in the spinach, then add the heavy cream.
- Serve: Transfer the soup to soup bowls and garnish with parmesan cheese as desired.
