Peach Cake with Cake Mix

Description

This moist and fluffy peach cake with cake mix is easy to make, delicious, and the most refreshing dessert for warm weather!


Ingredients

Cake

  • Canned Peaches: 1 can (30 ounces)
  • Yellow Cake Mix: 1 box (15.25 ounces)
  • Eggs: 3
  • Butter: 1/4 cup, melted

Frosting

  • Butter: 1 cup, softened
  • Cream Cheese: 1 package (8 ounces), softened
  • Powdered/Confectioners Sugar: 4 cups


Instructions

  1. Prepare: Preheat the oven to 350°F and grease a 9x13 baking dish with cooking spray.
  2. Make the cake batter: Drain the peaches over a mixing bowl and save 1 cup of the peach juice. Roughly chop the peaches and set them aside. To the mixing bowl with the peach juice, add the cake mix, eggs and melted butter and mix with an electric hand mixer. Next, fold in the chopped peaches.
  3. Bake the cake: Pour the cake batter into the baking dish and bake uncovered on the middle rack for 28-30 minutes, or until a toothpick comes out clean. Wait until completely cooled to frost the cake.
  4. Frost the cake: In a separate mixing bowl, mix the cream cheese and butter with an electric hand mixer on high until combined. Add the powdered sugar, and mix on the lowest setting until smooth. Frost the cake by plopping a few dollops of frosting on it and smoothing it out with the back of a spoon, butter knife, or offset spatula.

Notes

Avoid overmixing the cake batter to avoid a dense cake. 

Wait until the cake is completely cool before frosting it or the frosting will melt. Once the pan is slightly warm to the touch, you can move it to the fridge to cool down more quickly. 

This cake batter has a lot of moisture in it from the peaches and juice, so ensure a toothpick comes out clean before removing it from the oven. That will garuntee it is fully baked through. 

If you want the frosting to have a dreamy, creamy, whipped look, then spread it on with the back of a spoon. 

You can also use store-bought cream cheese frosting or vanilla frosting if preferred over making your own.
