Description
This hearty old fashioned shepherd’s pie recipe is super cheesy and comforting.

- 3 pounds Potatoes, Peeled and Roughly Chopped Into 1 Inch Chunks
- 1/4 cup Butter
- Two 1/3 cups Milk or Cream
- 3 Tablespoons Olive Oil
- 1 Carrots, Peeled and Diced
- 1 Onions, Diced
- 1 pound Beef
- 3 Garlic Cloves, Minced
- 1 Pouch Dry Onion Soup Mix
- 1 cup Beef Broth
- 12 oz Canned Corn, Strained
- 2 cups Shredded Cheddar Cheese
- Salt and Pepper, To Taste
- Chives, Optional for Garnishing
Instructions
MASH POTATO LAYER:
- Cook the potatoes: In a large pot filled 3/4 with water, bring the water to a boil on high heat. Once water is boiling, add the potatoes and boil until a fork can easily pierce through – about 15 to 20 minutes. Carefully strain the potatoes into a colander and place the potatoes back into the pot or a mixing bowl.
- Mix: Add the butter, milk or cream, and a pinch of salt. Mix with an electric mixer or hand masher until smooth and fluffy, about 2 minutes. Set aside while you make the meat mixture.
MEAT LAYER:
- Preheat: Preheat the oven to 350° F or 177° C.
- Saute: In a large pan on low to medium heat, add 2 tablespoons of olive oil, carrots and onions. Cook until soft, about 15 minutes. Spread the carrots and onions to the sides of the pan. Add 1 tablespoon of olive oil, the beef and garlic, and a pinch of salt and pepper to the middle of the pan. Break up the meat using a wooden spoon until no longer pink, about 5 minutes.
- Simmer: Add in the onion soup mix, beef broth, corn, salt and pepper and simmer on low for 1 – 2 minutes.
LAYERING THE SHEPHERD’S PIE:
- Layer: Transfer the meat mixture to a greased 9×13 oven safe baking dish, then spread the mash potato layer over top of the meat mixture, and sprinkle with cheddar cheese.
- Bake: Bake for 25 – 30 minutes. Cool for 10 minutes before serving.
- Garnish: Garnish with fresh chives (optional).
