Easy Blueberry Cobbler Recipe with Frozen Blueberries

Description

This old fashioned blueberry cobbler recipe is sweet, soft, and gooey with its fresh and juicy blueberry mixture made with sugar and lemon zest and its golden cobbler topping. 


Ingredients

Blueberry layer:

  • frozen blueberries: 4 cups.
  • granulated sugar: 1/2 cup.
  • lemon zest: 1 lemon.
  • lemon juice: 1 teaspoon.
  • vanilla extract: 1 teaspoon.
  • melted butter: 1/4 cup.

Cobbler topping: 

  • flour: 1 cup.
  • baking powder: 2 teaspoons.
  • granulated sugar: 1/2 cup.
  • salt: 1/4 teaspoon.
  • whole milk: 1 cup.

Instructions

Blueberry layer: 

  1. Prepare: Preheat the oven to 350° F or​​ 177° C.
  2. Mix: Combine and mix the blueberry mixture ingredients together in a medium-sized bowl, except for the butter.
  3. Spread: Spread the melted butter on the bottom of a 9x13 baking dish (you can use a basting brush if you have one). 

Topping: 

  1. Mix: Combine and mix the flour, sugar, salt, and baking powder in a separate medium-sized bowl using a spoon or fork. Add the milk and mix using an electric mixer.
  2. Combine: Pour and evenly spread the blueberry mixture into the buttered baking dish, then evenly pour the batter over the blueberry mixture. 
  3. Bake: Bake on the middle rack for 40-45 minutes (The cobbler should look slightly darker/more brown than golden).
  4. Serve: Allow the cobbler to rest for 5-10 minutes before serving. Top with vanilla ice cream as desired.

Notes

Consistency is key - add 2 tablespoons of extra milk if the cobbler batter is too thick or 2 tablespoons of more flour if it's too thin and runny. 

Bake until browned - there’s a lot of moisture in this southern blueberry cobbler from the fruit, so it's okay to bake it past golden.

Give the cobbler time to rest - this will help the blueberries stop bubbling, thicken the cobbler, and make it easier to serve!
