These easy lemon poppy seed muffins with cake mix are quick, easy, and delicious!
Ingredients
- Lemon Cake Mix: 1 box
- Lemon Pudding Mix: 1 box (3.5 oz/99 g package)
- Eggs: 4
- Vegetable Oil: 1/3 cup
- Poppy Seeds: 2 tablespoons
- Boiling Hot Water: 1 cup
Instructions
- Prepare: Preheat the oven to 350° F and line a large muffin pan with muffin liners.
- Mix: Add the lemon cake and pudding mix to a bowl and whisk until combined. Add the eggs, vegetable oil, and poppy seeds and mix with an electric hand mixer. Then add the hot water and mix on low until smooth.
- Bake: Pour the batter into the lined muffin cups, filling each 3/4 full. Bake the muffins on the middle rack for 18-20 minutes or until a toothpick comes out clean. Let the muffins rest in the tray for 5 minutes before transferring them to a cooling rack.
