Description
This Italian sausage soup is flavorful, comforting, and perfect for getting cozy with on the couch at dinnertime!
Ingredients
- Olive Oil: 2 tablespoons
- Onion, diced: 1
- Garlic Cloves, minced: 4
- Spicy Italian Sausage, removed from its casing: 1.5 pounds (about 4 large sausages)
- Garlic Powder: 1 teaspoon
- Dried Oregano: 2 Teaspoons
- Dried Basil: 1 Teaspoon
- Salt: 1 teaspoon
- Pepper: 1/4 teaspoon
- Red Chili Flakes (optional): 1 Teaspoon
- Chicken Broth: 8 Cups
- White Potatoes, peeled and chopped into 1/2 inch cubes: 4 Large
- Fresh or Frozen Spinich: 8 Cups

- Parmesan Cheese
- Fresh Parsley
Instructions
- Sautee: In a large pot on medium heat, add the olive oil and cook the onions until they’re soft and translucent, about 10 minutes. Add the minced garlic and cook for 1 more minute. Push the onions and garlic to the sides of the pot and add the sausage. Cook the sausage for about 5 minutes, breaking it down into crumbly pieces.
- Add Seasonings: Add the garlic powder, oregano, basil, salt, pepper, and optional red chili flakes to the sausage mixture.
- Boil: Add the chicken broth and increase the heat to high. Once the soup starts to boil, carefully add the potatoes and continue to boil for about 10-15 minutes, or until a fork can easily poke through a potato.
- Serve: Remove the soup from the heat and add the spinach. Let the soup sit for 5 minutes before serving.
Notes
Once you decase the sausage, roughly chop the raw sausage on a cutting board before adding it to the pot. This will give you a head start and help you break down the sausage more easily while it cooks.
While you can any type of potatoes, we recommend using white potatoes because they give the soup a really creamy element and contrast nicely with the spiciness of it.
If you’re not big on spice, you can replace the spicy Italian sausage with mild Italian sausage and choose whether you want to add the red chili flakes or not.
