Description

This Italian sausage potato spinach soup is flavorful, comforting, and perfect for getting cozy with on the couch at dinnertime!


Ingredients

  • Olive Oil: 2 tablespoons
  • Onion, diced: 1
  • Garlic Cloves, minced: 4
  • Spicy Italian Sausage, removed from its casing: 1.5 pounds (about 4 large sausages)
  • Garlic Powder: 1 teaspoon
  • Dried Oregano: 2 Teaspoons
  • Dried Basil: 1 Teaspoon
  • Salt: 1 teaspoon
  • Pepper: 1/4 teaspoon
  • Red Chili Flakes (optional): 1 Teaspoon
  • Chicken Broth: 8 Cups
  • White Potatoes, peeled and chopped into 1/2 inch cubes: 4 Large
  • Fresh or Frozen Spinich: 8 Cups

Optional Toppings

  • Parmesan Cheese
  • Fresh Parsley

Notes

Once you decase the sausage, roughly chop the raw sausage on a cutting board before adding it to the pot. This will give you a head start and help you break down the sausage more easily while it cooks. 

While you can any type of potatoes, we recommend using white potatoes because they give the soup a really creamy element and contrast nicely with the spiciness of it. 

If you’re not big on spice, you can replace the spicy Italian sausage with mild Italian sausage and choose whether you want to add the red chili flakes or not.
