Description

This easy jambalaya recipe with sausage is savoury, hearty, and all made in a crock pot!


Ingredients

  • Onion - Diced (1)
  • Garlic Cloves - Minced (2)
  • Bell Peppers, Green, Red, Yellow, Orange - Thinly Sliced (1 Of Each)
  • Jalapeños - Diced, Seeds Removed (1 Or 2)
  • Smoked Sausage, Sliced, (1/2 Pound) * Andouille is traditionally used, but alternatives are smoked kielbasa or chorizo.
  • Chicken Breast - Skinless And Boneless, Cut Into Bite Size Pieces (1)
  • Shrimp - Thawed, Uncooked And Peeled (1/2 Pound)
  • Chicken Broth (2.5 Cups)
  • Crushed Tomatoes (One 28-30 Oz Can)
  • Cajun Seasoning (3 Tablespoons)
  • Salt (1/2 Teaspoon)
  • Pepper (1/4 Teaspoon)
  • Basmati Rice - Rinsed (1.5 Cups)
  • Fresh Parsley or Cilantro (Optional)

Instructions

  1. Combine: Add all the ingredients to a crockpot except for the rice and optional ingredients.
  2. Cook: Cook covered in the crockpot on low for 3-4 hours. Stir in rice, and cook on high for 1 hour, then reduce to low for 1 more hour. 
  3. Serve: Serve topped with fresh parsley or cilantro (optional).
