    As soon as fall arrives, I make these pumpkin snickerdoodles immediately! I have been making this recipe for years and my family loves them too! I make multiple batches so there's a ton to go around to each family and to share at Thanksgiving. Every time someone takes a bite of these cookies, their first words are, "They're so soft..." and they are!

    • Cream of Tartar (1 teaspoon)
    • Salt (ยผ teaspoon)
    • Butter-Softened (ยฝ cup)
    • Granulated Sugar (ยฝ cup)
    • Brown Sugar-Packed (ยผ cup)
    • Egg Yolk (1) 
    • Vanilla Extract (2 teaspoons)
    • Pumpkin Puree (ยผ cup)

    Coating

    • Cinnamon (ยฝ  teaspoon)
    • Granulated Sugar (ยผ cup)
    • Pumpkin Spice (1 teaspoons)

    Step-by-Step Instructions

    Cookies

    1. Dry ingredients: Combine and mix the dry ingredients (except the sugar) in a medium size bowl. Set aside.
    2. Wet ingredients: Mix the butter and sugars in a separate medium or large bowl until smooth. Add the remaining wet ingredients to combine.
    3. Combine: Add the dry ingredients to the bowl with the wet ingredients, and mix until smooth (normal to look thick-ish).
    4. Chill: Cover tightly and refrigerate for 15 minutes.

    Coating

    1. Prepare: While the dough is chilling, preheat the oven to 350ยฐ F or 177ยฐ C. Line 2 baking sheets with parchment paper.
    2. Mix: Mix the coating ingredients together.
    3. Shape: Scoop 1 heaping tablespoon of dough per cookie and roll it into a ball using your hands. Toss the ball into the sugar coating. Add each cookie to the baking sheet about 1 inch apart.
    4. Bake: Bake for 11 โ€“ 13 minutes. Once removed from the oven, gently press down on each cookie with the back of a spoon to slightly flatten.

      Delicious cookies!! I made them just as written but chilled the dough overnight in the fridge. Everyone said they had a delicious, chewy texture, and the spices with the pumpkin were perfect! They disappeared so quickly; must-make for a fall occasion! ๐Ÿงก
