    These cookie bars are one of those treats I think about when I'm watching TV late at night and craving something sweet and easy to make! They're the best when they're still a bit warm, and I top a square with a scoop of vanilla ice cream and some chocolate syrup.

    Recipe Ingredients

    • Yellow Cake Mix: Boxed yellow/golden cake mix makes this recipe so quick!
    • Vegetable Oil: Flavorless oil works perfectly in a dessert recipe like this and makes the bars super moist!
    • Vanilla Extract: A bit of vanilla extract goes a long way in enhancing the flavour!
    • Eggs: The eggs help bind the cookie bars and make them chewy. The batter can be slightly easier to mix if they're room temperature, but this is optional.
    • Chocolate Chips: This recipe uses chocolate chips, but you can use milk chocolate chips if you prefer!

    Step-by-Step Instructions

    1. Prepare: Preheat the oven to 350 degrees Fahrenheit and spray a 9x13 baking dish with cooking spray.

    2. Mix: In a large bowl, combine and mix the cake mix, vegetable oil, vanilla, and eggs using an electric hand mixer (the batter will be thick and sticky). Use a rubber spatula to fold in the chocolate chips.

    3. Bake: Transfer and press the batter into the baking dish (to help with the stickiness, grease your spatula with cooking spray and use it to press the batter into the dish). Bake for 20-22 minutes or until the edges become golden. Transfer to a cooling rack and wait until it's completely cooled before cutting it into squares.

    Storage and Leftovers

    Cut into squares and store them in an airtight container at room temperature for up to one week or in the freezer for up to 3 months.

    Helpful Tips

    • Spray your spatula. Pressing the batter into the baking dish will be easier if you spray your rubber spatula with cookie spray to avoid it sticking to your hands.
    • Wait to cut the bars. You'll want to ensure the cookie bars are completely cooled before cutting them into squares; otherwise, they'll be gooey and oozing everywhere (while that sounds delicious, it can be quite a mess!)
    • Avoid parchment paper. While it may seem like a good idea to put some parchment paper in your baking dish before adding the batter so that it's easy to remove after baking, it will be difficult to spread the sticky batter on it. Cooking spray is your best bet for baking these bars!
    • Customize the bars. This recipe can be made in various ways with different add-ins like milk chocolate chips, chocolate chunks, M&M's, nuts, etc!

    Should the batter be sticky and thick?

    Yes, that's completely normal! An electric hand mixer will help you with mixing, and when transferring the batter to the baking dish, spray a rubber spatula with cooking spray to make it easier to press down into the dish.

    How do I know when the bars are done baking?

    You'll know when the edges are golden, and a toothpick comes out clean.

    Can you freeze these bars?

    Yes they can be kept frozen in an airtight container for up to 3 months.
